ANTEJENTACULAR CHOCOLATES

From the Latin ante, before, and ientaculum, the first meal of the day, antejentacular chocolates are the ones eaten before breakfast. In her book The Chocolate Connoisseur, Chloé Doutre-Roussel describes how, in her role as chocolate buyer for Fortnum & Mason, she would start chocolate tasting at about 6.00am, because her palate would be completely clean and fully receptive to the aromas and flavours to be encountered.
