ANTEJENTACULAR CHOCOLATES

From the Latin ante, before, and ientaculum, the first meal of the day, antejentacular chocolates are the ones eaten before breakfast. In her book The Chocolate Connoisseur, Chloé Doutre-Roussel describes how in her role as chocolate buyer for Fortnum & Mason, London’s luxury department store, she would start chocolate tasting at 6.00am, the time of day when her palate was most receptive to aromas and flavours.
